Happy Birthday to my beautiful Grandmother, who would have been 89 today, had she not succumbed to lung cancer in 1989.My grandparents lived in a small town in Illinois, and it was always the highlight of our year to drive from Nebraska to visit them.
My grandma liked to winter in southern Texas, where they drove in their Suburban and camper.
She had a huge spoon collection, and the racks hung in the kitchen. Whenever they travelled or we travelled, a spoon would be added to the collection. I have some of those now.
She loved to make us roast beef for dinner, which I loved. I remember her calling the butcher mid-dinner one time because one of them was afraid it wasn’t going to turn out right, but of course, it did.
One morning, my grandma asked me what I wanted for breakfast. Our wires got crossed, and I got an egg white omelet. That was before egg white omelets were popular, you guys. But I ate it anyway.
She was always sweet, and I loved her very much.
